Frequently Asked Questions

Polyglycerol Polyricinoleate, commonly known as PGPR, is a partial ester of polyglycerol esters of polycondensed fatty acids derived from castor oil, using ricinoleic acid and polyglycerol as raw materials. It appears as a yellowish viscous liquid.

Polyglycerol Polyricinoleate carries an HLB value between 0.4 and 4, placing it among the most lipophilic emulsifiers used in food processing. This very low HLB makes it especially effective at reducing viscosity and improving flow in fat-continuous systems like chocolate, compound coatings, and low-fat spreads.

Polyglycerol Polyricinoleate is used in low-fat spreads, chocolate, compound coatings, and pan release applications, with particularly strong performance results in chocolate specifically.
