DESCRIPTION

DATEM is a food emulsifier made from diacetyl tartaric acid esters of mono and diglycerides derived from fully hardened palm oil. It is widely used in the bread and biscuit industry to strengthen dough, improve volume, and support a consistent texture during baking.

  • Composition: 80% Datem: 20% Anti-Caking Agent
  • State: Powder
  • Acid Value: 30 to 60 mgKoh/g
  • Saponification Value: 280 to 320 mgKoh/g
  • Iodine Value: 2 max

  • Arsenic: Less than 3mg/kg
  • Lead: Less than 1mg/kg
