DESCRIPTION

DATEM is a food emulsifier made from diacetyl tartaric acid esters of mono and diglycerides derived from fully hardened palm oil. In bakery formulations, DATEM helps enhance gluten development, supports better volume, and delivers consistent product quality across batches.

  • Acid Value: 30 to 60 mgKoh/g
  • Saponification Value: 280 to 320 mgKoh/g
